Japanese cuisine plays a huge part in the gastronomy of my city Saigon. I, as a kid growing up in a globalization era, found myself surrounded by many emerging foreign cuisines such as Japanese, and spent countless dates with friends and family enjoying Japanese food and sweets in the city.
Following vegetarian diet, I miss sushi really. One of my most favorite food that I would never say no to. And I tried a few vegetarian/vegan versions and yet never got satisfied with either the taste or the nutritional content. But at the same time I never wanted to try making them myself because of the fear of failure and the cost of time and effort.
I am glad I got to try making them today, with a picture of them in my head and they turned out amazing. This is not perfect but it made me happy and gave me so much nostalgia that I cannot wait to share. Here are 5 varieties inspired by seasonal ingredients: eggplant unagi, snowpeas n courgete noodles, mix potatoes button mushroom and wild garlic flower, tofu and oil caviar, turnip greens with shitake and torched pear spicy mayo. I had a lot of fun in the making ( and also eating), and I hope it shows that veggie diet is not boring and we can have a lot of fun with it.
