Autumn Sweetness

It’s been so long since my last post, to the point that it is no longer summer 🤯. Time flies, with lots of things been happening…

Finally i got myself together and spent some time trying making my favorite treats with a touch of the season: pumpkin mochi!! The filling is pumpkin puré cooked slowly on stovetop with sugar, a bit of starch, until thickened. Finish with a hint of cinnamon and quickly chilled in the fridge.

Mochi made from glutinous rice flour, sugar and water, coated with some potato starch. Here is the basic recipe if you want to try at home:

150g glutinous rice flour
180ml water
100g sugar

Mix all together in a heatproof bowl, with no lumps. It will be a quite liquidy dough. We cook the dough in the same bowl either by steam or microwave. I used microwave because it is faster and since I dont have any steamer big enough for the bowl 😅. I put 360W for 3 mins at first, then checked the dough, and repeated 3 mins again. This is the thing with microwave because the dough on the rim will be cooked first very quickly, so we need to check and stir after each round. The dough is completely cooked once it becomes transparent, and doesnt taste like raw starch anymore.

When it is still hot, pour it out on a working surface dusted with potato starch to prevent sticking (i used silpat makes my life easier). Cut and roll the dough as you like, with or without the filling 🥰. It will be harder to work once it gets cold… and the cooking process is super fast so I would suggest starting with half the batch then the other.
